Chili Seasoning Mix

"Tex-Mex" food seems to be a favorite today among Americans, and everyone seems to have their favorite Chili recipe. I found an easy seasoning mix that stores well that makes cooking Chili a breeze! It also can be used in a variety of other "Tex-Mex" creations.

Chili Seasoning Mix

  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1 tablespoon seasoned salt
  • 1 teaspoon onion powder
  • 2 teaspoons cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon oregano

Mix all ingredients; store in a small airtight jar in a cool, dry place. Makes about 1/4 cup.

Quick Chili With Beans

  • 1 lb. ground beef
  • 1 can stewed tomatoes
  • 1 tablespoon Chili Seasoning Mix
  • 1 can kidney beans
  • 2 tablespoons cornmeal or flour
  • 1/2 cup shredded cheddar cheese (optional)

Brown ground beef in a large saucepan, stirring occasionally, until meat loses its red color. Stir in cornmeal/flour, then add remaining ingredients. Bring to a boil, cover and simmer 10 minutes, stirring occasionally. Serve in bowls, sprinkle with shredded cheese. Serves 4.

Chili Macaroni

  • 1 lb. ground beef
  • 1 cup cooked macaroni
  • 1 can stewed tomatoes
  • 1 tablespoon Chili Seasoning Mix

Cook beef in a large saucepan, stirring occasionally, until meat loses its red color. Add remaining ingredients and simmer 5 minutes, stirring occasionally. Serves 4

Chili Snack

  • 4 cups cornflakes
  • 1 cup small pretzels
  • 2 tablespoons butter or margarine, melted
  • 1 cup unsalted nuts
  • 2 teaspoons Chili Seasoning Mix

Heat cornflakes in a 300degree oven for 5 minutes, or until warm. Remove from heat and add pretzels and nuts. Mix lightly. Pour butter over mixture and sprinkle with chili seasoning mix. Stir well and put back in oven 15 - 20 minutes. Serve warm or cool. Makes 6 cups.
