The holiday season is an especially busy time for penny pinchers. There are gifts to be made, homemade wrapping paper to be created and a great deal of comparison shopping to be done. Having cheap and quick to make meals can add a few precious moments of time to your day. To this end I have created 5 recipes that take less than 20 minutes to prepare from start to finish and cost only $3.50 that serves at least four people.
Southwestern Pasta
Cook pasta according to package directions. Meanwhile heat salsa, black beans and corn in a large saucepan, stirring well until heated through. Add cooked pasta to sauce, toss and serve.
Total cost is $3.00-$3.50 depending on which pasta you choose, macaroni will almost always be cheapest.
If you don't like your pasta spicy, substitute canned or fresh tomatoes for the salsa and season with garlic, oregano and basil.
Many Dollar Stretcher readers have e-mailed me asking for recipes that were printed in previous issues. I am therefore considering creating a pamphlet of recipes that have appeared in The Dollar Stretcher.
