  • 1 can refried beans

  • 1 14.5 oz salsa

  • 1 1/2 cup grated Monterey Jack or cheddar cheese

  • 6 tortillas

Spread 1/3 cup of the refried beans on each tortilla. Next top each tortilla with 2 T. salsa and 1/4 cup grated cheese. Place on cookie sheet and cook in 500 degree oven until cheese is melted. This will take about 5-10 minutes. Remove from oven, fold tortilla in half and serve.

The total price is $3.25. The price is calculated based on prices in Southwest Washington at a "bag your own groceries" type supermarket. Prices will vary regionally. People have written me to ask what brand of salsa I use to keep recipes low. I use S & W canned salsa. This is the cheapest brand in my area, unless I buy in bulk.

Suggestions:

  • Tortillas usually come in packages of 12 so you will have leftovers to use. There are many ways to use them in addition to tacos, burritos and enchiladas. Try deep frying them in vegetable oil until they are golden brown and crispy. Next place them on paper towels allowing oil to drain. Sprinkle them with sugar and cinnamon, a delicious treat!
